Chronicle food critic Aisha Jade, serves up her own recipe for the best meal of the day – breakfast.

Porridge is one of the most versatile breakfasts. You can have it sweet, savoury or anyway which you please. So when I heard someone refer to it as ‘boring’ I couldn’t disagree more. 

Jamaican cuisine is all about eclectic flavours, so much so breakfasts like porridge, are seasoned well. There are many varieties including cornmeal, peanut, hominy (corn) and some people get very creative using green banana and plantain as the main ingredient. This is the recipe to a spiced porridge: a delicious, hearty meal that is guaranteed to fill you up and give you a good source of energy to start your day.

Ingredients:

1 cup of coconut milk

1 cup of water

1 cup of oats

1.5 tbsp. vanilla essence

1 tbsp. honey

1 tsp ground cinnamon

1 tsp ground nutmeg

(1 tbsp of condensed milk could be added for those who like things extra sweet)

Pour 1 cup of oats into a medium sized pan. Add 1 cup of coconut milk and 1 cup of water. Turn on the stove to a medium to low heat. Continuously stir for roughly 6- 8 mins. Proceed to add 1 tbsp. of honey, 1 tsp grounded cinnamon, 1 tsp grounded nutmeg and then 1.5 tbsp of vanilla essence. Turn down the stove to the lowest temperature and stir for an extra 2 mins. This dish serves 2 small bowls, or a large one if you are greedy like me. Porridge will never be boring again. Enjoy!
